Creamy Lentil Soup with Quinoa Pilaf

2 lbs Green Lentils
3 Carrots (Shredded)
1 Large Onion (chopped)
6 Small Sweet Peppers
3 Cloves Garlic
1 small knob Ginger
2 tsp. Chili Powder
2 tsp. Liquid Smoke
2 tsp. Ginger (Powder)
2 tsp. Onion (Powder)
3 sweet basil leaves (chopped)
In a large pot saute all veggies until onions caramelize, about 15 minutes. Add water and bring to a boil. Next, add beans and simmer on low for about 1 1/2 hours or until beans are tender. Blend 1/2 of the soup Add parsley and minced ginger for garnish.
